I have no idea why, but I am compelled to answer your question in far too much depth. I guess inspiration has struck.

Ignoring Salem (because her unconditional immortality complicates things) let's just consider the Grimm themselves. Anything that clearly couldn't exist without Salem (the smart Grimm, the WHALE) are not being considered either.

Which leaves us with a bunch of dark monsters, including a few the size of mountains that are truly ancient and monstrous. They want nothing more than to kill "humans"—but as they also target faunus, it seems reasonable that they'd target anything that talks or has what one would consider a "soul" or "aura." So this means the normal animals of Equis are safe.

So, first of all... how do the ponies fare?

If they have the Elements of Harmony, easy victory—beings of pure murderous darkness are outright decimated.

However, if they do not, we have a problem—that being that 99% of ponies are flighty and nonviolent. Most will run and scream and that's exactly what the Grimm want, leading to a very large and very brutal massacre. However, ponies are not weak, just very unused to fighting. Naturally the army will be called in as well as the combat specialists and the heroes. However, most of them will not be ready to deal with the sheer horrors of bloody, brutal battle. Celestia's guard are rather squeamish, and of the mane 6 I'd say only Rarity would be able to push through it all, maybe Twilight. As we know from many fanfics on this site, our MCs do not deal well with death in the slightest.

I predict that the initial organized response will fail without the Elements, and that death will demand that the princesses intervene. Retired or not, Celestia and Luna have seen wars and great darkness, and Celestia has what can best be described as a "type advantage" with her power over the sun. Two individuals are not able to stop mass death and perhaps the entire collapse of the Equestrian government, but they will keep the planet from dying to the plauge.

Naturally Discord oneshots everything the moment he notices anything is going on, but for all we know he's taking a century-long nap during all of this.

Conclusion: the Equestrians have enough individually powerful and capable individuals to defeat the Grimm, but not enough to keep mass death and societal instability from occurring.

The other nations:
Griffonstone: dead. They simply do not have a communal anything and have a small population.
Yakyakistan: dead. Proud and strong as they are, they lack the power to actually oppose the Grimm.
Mt. Aeris: may be able to retreat beneath the waves and use their artifact to seclude themselves once more. Survival, perhaps, but not a pleasant one while everything outside them burns.
Changelings: The Changelings would actually do well. They have memories of being in a great and disciplined army and can mimic the powers of the small Grimm. They do not need powerful individuals to face the Grimm, but it would be a long war.
Dragons: an individual grown dragon could take on one of the massive Grimm—and even young dragons are amazingly durable and comparative. The moment they organize the Grimm have lost.
