So, Sunset's Isekai (the bar) has gathered quite a few regulars, but also part-time and full-time staff. This has happened through some stories, and some characters have been obviously interacted with, but others haven't.
I figured I'd throw a list of recurring characters that live and/or work the odd job at the Isekai and what they do there. So, without further ado, here we go:
Lena DeSpell: If Sunset had (officially adopted) daughters, they would be Lena and Danielle. And as far as they are concerned, that is the case. While the paperwork is somewhat stagnated, ever since her first visit to the bar, and subsequent apprenticeship to Sunset, Lena has really become part of Sunset's family. She learns from her, spends quality time with her, adventures with her, and has her own room at the Isekai. Whenever there's an event, Lena is there to help serve the tables, or if it's classes, to study and learn with the others.
Dani Phantom: Danielle Phantom became a multiverse traveler through mostly undisclosed means, but during her adventures, she found her way to the Isekai, and after having fun there, decide she was the bouncer. It didn't' matter whether Sunset or Rarity felt it was necessary, that was her job and they could pay her in milkshakes, thank you very much. She was kind of surprised and secretly touched when she got her own room, and Sunset essentially told her she had a home. Ever since, she's joined Lena as a student and occasional server at the bar, with a tendency to head out seeking thrills and adventure across the multiverse… always knowing she can return home.
Freya Crescent: Freya and Sunset are a unique kind of couple, but it works regardless. Having learned the secretive art of bartending from Sunset, she's the second hand behind the bar and Sunset's companion through the omniverse, as much as they can make it work across space and time. Freya and Sunset have gone adventuring many times, off camera, and in the planet Gaia, Zidane and others have heard stories of their friend adventuring with another Burmecian with red and gold fur.
Kassandra: The Eagle Bearer found her way into the Isekai during a layover when her entire crew, plus Herodotos, got completely drunk and couldn't leave as scheduled. Exchanging some mythical minerals for a strange card was the last thing she thought would bring her to a place where she would enjoy spending time, and even help out when staff was needed. Kassandra has flirted with Sunset, and she knows the invitation is there… if Freya approves. Good luck.
Erika Mishima/Hudiemon: Hudiemon is essentially IT support for the Isekai's systems. Well versed in many digital matters, this former genius hacker-turned-digimon has found a second home away from the digital world. Being that half the problems she faces are technomagical in nature, she's a regular visitor and has expressed interest in attending Sunset's classes.
Ori: Ori took care of the Isekai's core for some time, and lived there for a few decades. His gentle soul, and caring nature were a huge boon to the Isekai, especially if Sunset went through something traumatic. While he was not in contact with visitors due to his nature, he was still a soothing presence that helped Sunset every day. Ori currently resides with Robyn, Aisling, and the other spirits and wolfwalkers in Aisling's forest, outside the normal world near Kilkenny, Ireland.
Ahsoka: Arguably the one that would need the least an intro, Ahsoka has her own room at the Isekai, and goes there often when not actively working to make her original universe better. She occasionally will help out at the bar when there's a lot of visitors, and enjoys doing so during the "Pilot's Night", when she gets to meet old friends, engage in conversations with new ones, and generally do something that helps others relax. She recently shares a sort of mentorship with Hiccup over their new friend Mirage Farina.
Nope: Less of an actual employee, but always a welcome visitor whether it be for partying, relaxing, or simply delivery, the alicorn known as Nope is definitely not destined for greatness. Definitely, absolutely not at all. Never. But she does stop at the bar and help with deliveries there.

Mirage Farina Jenius: Hasn't met Sunset "Mirage" Shimmer from Gunsmoke, but finds it kind of amusing that she shares her name with a gunslinging badass. In exchange for occasionally serving at the bar (a practice she enjoys more than she lets on), she gets to indulge in her own personal guilty pleasure: getting invited over to fly and try out different things in different universes, now that her passion for flying was rekindled. She and Ahsoka have a friendly rivalry going on when piloting together.

Bernard: Not exactly a visitor, Bernard (named such by a visiting Wallflower Blush) is a symbiote spider left behind by Gwen Stacy, and officially adopted as the Bar's Pet by Sunset. Whether it can turn Sunset into a Venom is still unknown, but what is known is that its favorite food is kale and it is smarter than people might think. Bernard lives in a little terrarium that overlooks the bar from its place above the cashier.

Edit: I also sneaked in one of my Ranma 1/2 crossovers and my Digimon/Megaman crossover as mostly cameos.

Wait, so that's why I sometimes saw key instead of card in this story? The staffs get the key while the normal patrons get the card?
5634731 Yes! You got it! If you have a room at the Isekai, you're getting a key. Working there is voluntary for all of them.

That was helpful. In most stories I can get to know and remember a character after a few chapters, but the way this story is structured usually has a character in the spotlight for just a chapter, then only get an occasional namedrop in the background as a new character gets a spotlight. Certainly not a bad way to do it, but it does make it hard for me to remember the regulars.
why do I suddenly wanna see the Rescue Rangers or at least Gadget Hackwrench, visit the Isekai? XD

I'm half expecting some episode at some time where someone brings in another spider, and the two vanish behind the terrarium. Maybe Peni Parker with her Spi/dr symbiote. Then, some time later, as the bar travels the multiverse, a couple hundred miniature spiders with crazy coloration let out silk lines and cast off into the Vortex for places and times unknown...

It was more "considering it appears to be an ordinary spider", but those don't typically eat plants so there's probably a bit of that too.
