I'd have to go with Spike's Pony Chronicles.

Hmm.... maybe the Sweetest Gem since it was pretty well-developed. It also was believable enough to picture it canon-ly happening in the series even though it was written before Twilight becoming a princess. Spike's Pony Chronicles was pretty good too though.
