Well Applejack, when thinking straight, is the most level headed of the Mane 6. I personally peg her as having the most practical parts down. As for not trying her accent I agree that writing it out just looks out of place and most people can just add it automatically and go from there.
Overall it is nice to see these two interact as they just don't interact enough.

Well, she did share a episode with him unlike the others (Save Rarity and Twilight). Applejack acts like a caring older to sister like Twilight does with him sometimes, but unlike Twilight and Rarity, Applejack doesn't tell him to do stuff for her. Spike is not in love with Applejack, so he can be more open and honest to her. With that in mind, I feel like Spike has a more close relationship with Applejack than he does with Rarity. Shippers see that but with a romantic aspect, hence Applespike.
Huh, and here I thought AJ had sort of a hate-lust thing going with the chimera. It's the only reason I can think of for not taking an obvious detour around the Fire Swamp.
