The problem I have with this is that Last Thursdayism, or the Omphalos Hypothesis in general, doesn't posit that the universe is destroyed and re-created each week with new copies of the universe's previous inhabitants. It simply posits that the universe was created last Thursday (or whenever) and all evidence of existence prior to that, including memories, is fabricated. There was no you nor a version of you last Wednesday, you simply have a false memory of last Wednesday that was implanted in your mind at the creation of the universe last Thursday.
