79617 Oh that, well if you saw the first series then the explanation is that the person who bends has their chi attuned to an element, it was theorized by many that from the stories on how benders got there powers is that the respective nation had a close relation with said element and learned from an animal or something else that affected said element.
Earth kingdom- the mainland, rocks everywhere, learned from badgermoles
Fire nation- Volcanoes, learned from dragons
Air Nomads- The mountains, learned from sky bison
N/S Water tribe- Surrounded by ice, snow and the oceans, learned from the Ocean and Moon spirits Twi and La
What Amon did was remove that affinity with said element from that person's chi, like what Ang did to Ozai
