Honestly, I think I just blew my own mind.
We call it personality because it's the reality of a person's being. But for mlp should it be ponyality because it's the reality of a pony's being?
This gets into the whole should ponies even call themselves people debate, which has multiple arguments that DO NOT NEED TO BE DISCUSSED but the question remains, should it be tied to whether they call themselves people or not? Maybe it's to nebulous of a concept to ponify. I mean, it's not like handshake -> hoofshake.

Well... it's hard to say without going into the "ponies = people" debate, but... "people" is the plural of "person", so yes, if ponies are people, then they have a personality.
Personally, the word that always trips me up is "manually". :)

I thought the same thing for persona, but I don't think person is a word that needs to be translated.
I think that ponies would refer to any sentient (nonspecific) race as "people." This becomes important when addressing a mixed crowd of ponies, buffalo, and griffins to avoid giving offense. So any derivatives of the word should be fine.
I think it often depends on how well it flows in speech for whether certain things are changed.
It's easy to say "hoofing" for "footing," but not as easy a parallel to say "that'll come in hoofy" rather than "handy." For bad translations like that, I tend to work my way around that phrase. I.E. "That'll be useful."
