And its all quick, vague sentences like 'carrot top does this.' 'cherry nova talks about ____' so its nothing but a basic framework for me to build on but... 5 whole pages? I'm not sure how many chapters this will equate to and it's subject to change but wow. xD

Well it surprised me there's that much. For so long I've just has the big bullet point events that had to happen. In order to connect them quite a bit's got to happen.
And I didn't even count what's got to happen in the epilogue.
I'm not complaining
Probably 8-10 more chapters roughly... If not double that. But still, it's good that you know where you want the story to go however.

Hey, outlines don't have to be big, precise, outlandish things. They can be simple and straight to the (bullet) point.
As for the epilogue, it depends on whether Jack stays in Equestria (plus the reason he stays; choice/no choice), goes back home (how he's received; did his love ones continue to miss him or move on), and what happens to the ponies (do they learn his a human, what a human is, or just continue to believe in Lord Barleycorn, the King of Autumn).
Just add these as a few more bullet points and I'm sure you'll do just fine.
