On a kick of transformed humans of late, one thing I am looking for is a story where a human becomes a Pegasus and learns how to fly.

Really embarrassed here but... My own The Price of Wings is very much that... up until the "learns how to fly" bit, he's still getting to that. Probably in the next chapter, which hopefully won't take as long to write as the last one did.
